What is Einkorn?

Einkorn is the most ancient of grains, dating back thousands of years.  Its high protein levels make for an instant nutritional improvement over hard red wheat (common grocery store wheat).  

Additionally, einkorn presents with an exceptionally higher content of antioxidants such as riboflavin, carotene (alpha & beta), lutein, and zeaxanthin.

A Gentler Gluten* 

Boasting just 14 chromosomes (as opposed to modern wheat's 42 chromosomes), this diploid also lacks the D chromosome which seems to be connected with gluten insensitivity.

 

Penn State College of Agricultural Sciences' Department of Plant Science notes

"There [is] some evidence that einkorn contains a less toxic form of the gliadin protein, which may reduce the toxicity to consumers with gluten sensitivities."

It has been proposed that the einkorn protein structure ratio of soluble to insoluble proteins of 2:1 (versus modern wheat's 8:1) is likely to be one more reason why einkorn wheat is easier for the human body to digest.

*Gluten Sensitivity is different from Celiac Disease.  Consumption of einkorn is not recommended for those who suffer from Celiac Disease as they should follow the dietary guidelines from their doctor.

Location is Everything

Like most heirloom varieties of grain, einkorn grew wild throughout the world but this one was first cultivated in the heart of Mesopotamia.

It is believed that einkorn wheat originated there,

in the fertile region of the Tigris-Euphrates river system.

Today, einkorn is primarily  grown in the Mediterranean.
